My First Wine Tasting Experience at Nigeria Beauty&Wine Expo

It was a mixture of fun and hydration battle from the heating sun at the Nigeria Beauty&Wine Expo yesterday 10th of October, as i got into the TBS venue and made my way into the tents skit my direct to the Wine section where i had several gulps of wine testing varying from fruits to Alcoholic and champagne

There were a number of wine Booths that made my day light of stress and smooth

Angels Tears Wines, Vollereaux Champagne, Obudu Wine,Pelican,Embers wine, Xenius,Diasaronno, and others where at the Wine Expo and they all tested nice.. most of which were new in the Nigeria Market and a very few have been around.
it was wine tasteful for me and i struggles not to get tipsy! lol

Different ways to prepare Pepper Sauce

Here are most common principles and favors for making a good pepper sauce, with a few personal ingredients I like to add in my invisible cooking diary.



1. simmered the dried peppers in water for 20 minutes to rehydrate them. Then I ground the peppers to a paste in a food processor. then transferred the paste to a blender and mixed the pepper paste with vinegar, salt and sugar. I blended the peppers on high speed for up to 5 minutes, adding vinegar until it reached the consistency you liked. Then strained out the seeds and transferred the sauce to old hot sauce jars Traditionally, hot sauces age for at least a couple weeks before being used.
Ingredients:
  • 3 cups (about 4 ounces) dried small red chili peppers
  • 1 1/2 cups distilled vinegar
  • 2 teaspoons salt
  • 1 tablespoon brown sugar

2.  Another way to make pepper sauce

Cooking pepper sauce, Make sweat the pepper in butter with the pan. After a minute of cooking, add the brandy and let preparation burn. Then pour the cream and reduce to half the whole. Add the veal stock to this mixture before boiling. Prior to extinguish the fire, add the mustard without making the sauce boil. At the end of cooking, you can also add shallots and chopped bouquet garnis (thyme and bay leaves). Tips The dishes associated with pepper sauce Game, grilled red meat, steaks are all foods that can be greatly improved with a pepper sauce. At the end of the preparation, we can add some chopped shallots, parsley and chives, finely chopped thyme. The advantage with the pepper sauce is that it accepts all the fantasies that can enhance the taste of dishes. For a sweet pepper sauce, cooking will take much less time, while if you want a stronger sauce must cook the sauce for at least twenty minutes.




What you need for a great pepper sauce
10 cl veal stock
A teaspoon of mustard
10 cl cream
2 cl of cognac
5 grams of cracked pepper
Salt Butter

3. You’ll Need…
15-20 hot peppers (scotch bonnet or habanero)
1 teaspoon salt
1 1/2 cups vinegar
10 leaves of Shado Beni or 1 cup cilantro
6 cloves of garlic
1/4 small green papaya
1 small bitter melon (caraili)
1 lemon or 2 ripe limes
Juice of 4 limes
8 pimento peppers – optional
1 carrot – optional (helps to balance heat from peppers)

Spicy shawa and pomo


Easy Weekend desert

There are something’s we Africans are known for, that is we cook, we do it right. We are very creative and we come up with the most ingenious dishes like this spicy shawa and pomo ( smoked bony fish  and cow skin).It is usually served in parties as a dessert especially to those that take alcohol. It goes very well with it because it’s spicy.

INGREDIENTS:

Onions

Shawa  (smoked bony fish)

Blended par boiled pepper (not smoothly blended and without tomatoes)
Pomo (cow skin)


Vegetable oil

Magi

Salt
 
 

 Peel the sin of the shawa and break it into biteable sizes.

Rinse the pomo and cut into biteable sizes too. Soak in salt water.

Place a clean pot on the stove, add about a litre of water and add both the shawa and the pomo to it.  Season with salt and magi to taste.  Boil until the shawa is soft, and then sieve the water out.

Place a clean frying pan or wok on the stove.

Add about 2cooking spoon of vegetable oil into the pan to heat.

Add some diced onions to the oil; let the onion fry till it’s translucent. Then add the par boiled pepper (judge by the quantity of shawa and pomo you boiled). 1 portion of pepper to 3portion shawa and pomo.

Stir with a wooden spoon the pepper and onions, and then add salt and magi to taste.

Add 1 or 3 whole rodo to the pepper so it makes it spicier (it’s optional).

Allow to fry until it’s sticky, then add the shawa and pomo and stir fry. Taste the mixture; you might need to add more seasoning.

Add the leftover diced onions. Taste the mixture and see if it’s tasty enough.

Serve and garnish with fresh onions and tomatoes.

Jollof Rice


Jollof Rice

INGREDENT

Rice
Tomatoes Paste
Blended and par boiled pepper
Bay leaf (optional)
Butter
Beef stock
Thyme,curry and white pepper
Vegetable oil
Seasoning
Salt




 



Preparation:

- Place a clean pot on the stove and add about 2 to 3 cooking spoon of vegetable oil in the pot to heat.
- Add some diced onions to the oil, let onion fry till is turning slightly brown,then add the tomatoes paste
- Fry the tomatoes paste for a while then add the blended and per boiled pepper
- Stir with a wooden spoon, the pepper and the tomatoes paste, add a tea spoon each of thyme,curry and white pepper,add  maggi and salt to taste

- Allow to fry until its sticky then add your stock or water, taste the mixture, you might need to add more seasoning ( maggi and salt)

- Rinse some bay leaf and add to the stock and cover for it to boil
- Wash rice and strain the water,wash like three times or till the water is clear. Add the washed rice into the boiling stock and use a wooden spoon to turn slightly so the rice does not stick to the bottom of the pot and begins to burn, cover and allow to cook

- Check at instance by using the wooden spoon to lift up by the sides, add water in little bits,till rice is cooked. ( The reason the water is added in bits is so that the rice does not become soggy)
- when the water in the rice remains little,add some butter and the remaining chopped onions
- Allow to simmer for about 2 to 3mins, then turn the rice completely so the onions and butter mixes through the whole pot

- uncover the pot for a while to let the heat out
Jollof rice is ready. It can be served or be packed in a cooler. It can be served with fried beef,chicken or fish
Jollof Rice can be garnished with peas, carrot, cucumber,tomatoes. etc

The event's sole aim is to educate all ladies in attendance on Cervical Cancer and provide on the Spot Screening and results for breast and cervical cancer and the education of healthy food

Cook Out Against Cervical Cancer' is a food party aimed at getn lots of women screened for cervical cancer.We will continue with this preventive  strategy till we reach all women in Nigeria,through unique events,taking place all year round.
